Have you ever tried to find that perfect snack? The one that is both healthy and filling and doesn’t leave you looking for something else as soon as you’re done? That has been a struggle of mine for as long as I can remember. This recipe was born from a similar snack that my mother used to make when I was younger. It was basically vanilla yogurt, diced apples, and granola cereal all mixed together. Some might call it a yogurt parfait, but I always thought of it as “that yogurt and granola stuff.” We were very proper growing up.
I would still occasionally make this as I got older but my struggle with dairy was always an issue. Along with the fact that I’m not much of a yogurt fan so I never had it on hand…I know, strange, but over the last few years I’ve discovered wonderful, charming, fabulously amazing Kefir! Kefir (the dairy kind) is made from milk, and like yogurt contains a large variety of probiotics. I have also found that Kefir is easier on my system than yogurt and other milk products.
Vanilla kefir combined with apples and granola is a fabulous snack that is light and delicious, and it combines salty and sweet with amazing probiotic goodness! You can eat it for breakfast, in between meals, or even as a late night snack. It’s light and satisfying and deliciously healthy. (Are you sold yet?) Okay, here’s the best part of all, it can be completely homemade! This way you know everything that goes into it. I love using our homemade granola with this, as well as making our plain kefir into vanilla (I’ll explain how to do this below-super simple!), but you can also use a store bought vanilla kefir to make it even easier.
- 1 cup of vanilla kefir (to make plain kefir into vanilla, see below)
- 2 apples, peeled and diced
- 1 cup homemade granola
- 1 cup plain kefir
- 3/4 tsp vanilla extract
- 1 Tbsp plus 2 tsp sugar (add a little at a time and taste the kefir to make sure it's at the correct sweetness for your taste-buds, I tend to like things sweet, but feel free to reduce the sugar accordingly).
- Combine all ingredients in a bowl and enjoy!
