Since the time I was young, this was our go-to, all-time-favorite cookie around my house. In fact, my sister and I would dutifully head out to the gym (because we were in cross-country and track in high school) for a 3-hour workout (I’m sure our coaches didn’t require 3 hours, but we had plans afterwards…big plans) only to return with lightening speed and pull out everything we needed to make these delicious cookies; and we just MIGHT, have eaten the entire batch…on more than three occasions…
There were even times when we would make a half batch, or a fourth of a batch of these cookies because we didn’t want our brothers (who were known by all, to steal any delicious delectable we had without remorse of conscious) to know we’d made them.
I like to consider this a protein cookie because of the peanut butter…it gives me reason to eat just one more…maybe two. This recipe is basically a peanut butter cookie with chocolate chips thrown in. It comes from the beloved Betty Crocker’s Cookbook in all it’s glory, with stained and torn pages…because, that’s how you know it’s a good cookbook, right? At least that’s how ours was, getting things messy was all part of the fun!
One thing that I love about these cookies is how perfectly they come out Every.Time. Since moving to a state with higher altitude I have found that with a number of our favorite recipes I have had to alter their ingredients in order for them to come out properly; but with these heavenly beauties, there are no alterations needed. They simply work, and are delicious!…and that, my friends, is a great reason to give them a try!
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup white sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1 1/4 cup flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chocolate chips (we like using milk chocolate chips)
- Mix butter, sugar, peanut butter, and egg with blender until moistened and well mixed.
- In a separate bowl mix all dry ingredients.
- Combine wet and dry ingredients and mix with a large spoon (don't over mix).
- Add in chocolate chips and mix just until combined.
- Roll into balls (I like using a tablespoon to help measure their size).
- Bake at 375 degrees Fahrenheit for 7 minutes. (These will be slightly underdone, but will be nice and soft. If you want them cooked more you can bake them up to 10 minutes).
- Cool 5-10 minutes on cookie sheet, remove from cookie sheet and cool on wire rack or parchment paper.
- These are fabulous with ice cream!
