Ah, Olive Oil Chicken Pasta, this is definitely one of those quick go-to meals when you are running short on time but would like something light and filling. The first time I made this I was just randomly throwing in ingredients not sure what I would get, but over time it’s taken on more consistency. We recently added carrots to it which brings great variety to the dish. If you are a mushroom fan, I would also highly recommend adding mushrooms because they add amazing flavor to it as well!
- 1 pound bag of spaghetti noodles
- 3 Tbsp olive oil
- 1/4 small onion, chopped*
- 1 garlic clove, minced*
- 1-2 large chicken breasts, shredded or cubed (or one 12.5 oz can of chicken also works)
- Salt, pepper, garlic powder, and onion powder to taste
- 1/2 cup peas
- 1/2 cup carrots, diced
- 1/2 cup mushrooms, sliced (optional)
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian Seasoning (or a combination of Marjoram, Basil, Rosemary, Thyme, Oregano, Savory, and Sage)**
- Prepare spaghetti noodles in a large pot according to directions on package (I usually add 1 Tbsp of olive oil and 1 tsp of salt to the pasta as it cooks).
- In a large sauce pan add 3 Tbsp of olive oil, and saute' onion and garlic clove over medium heat.
- Add chicken to the sauce pan, season with salt, pepper, garlic powder, and onion powder to taste (I just sprinkle each seasoning over it one time).
- Add in peas, carrots, and optional mushrooms and saute' with chicken until tender (between 5-7 minutes).
- Once pasta is done, drain the water and put back in large pot. Add the 1/4 cup olive oil, 1 tsp salt, 1/2 tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp italian seasoning. (It may help to add the seasonings a little at a time as you stir the pasta noodles, or add half seasonings, then stir, then add the other half so that it's easier to get it over all the noodles).
- Combine chicken and vegetables to the pasta noodles and mix.
- Give it a taste and add more seasonings if you'd like.
- Serve warm.
- *I have made this without the fresh onion and garlic and it still tastes great. So if you've got it on hand throw it in, if not, don't stress!
- **I have also made this using only basil and oregano when I've been out of Italian Seasoning and it works just fine. So whatever you have just combine it to make approximately 1 tsp of seasoning in place of the Italian Seasoning. Good luck!

Frozen or canned peas?

I use frozen peas. We tried canned once but it changed the flavor a bit, which we didn’t like.

We made this tonight. We only had canned peas so we rinsed them. My son also added some more olive oil when he was adding the meat mixture to help it incorporate better. Next time we will double the garlic as we love garlic. We served with a caprese salad and it made a great summer meal.
