I love making fresh hash browns. Making your own allows you to cook them to the crispness you desire and season them to your hearts content. A few years ago, a friend of ours from Spain mentioned how his family made hash browns. They used virtually the same process, but they used an additional step of rinsing out the shredded potatoes before frying them to reduce the amount of starch. I have been hooked ever since!

Ingredients
- 6-8 medium sized red potatoes
- 1/4 cup Olive Oil (enough to keep the potatoes from sticking to the griddle)
- Salt and pepper to taste
Instructions
- Heat griddle to 400 degrees
- Shred the red potatoes (leaving skins on)
- Rinse the shredded potatoes in a strainer
- Place shredded potatoes on hot griddle and spread out evenly
- Sprinkle with salt and pepper
- Let potatoes cook for 5-10 minutes on one side before flipping them to the other side. I flip them in sections like you would flip a pancake. Avoid moving the potatoes around too much as this can sometimes make them more mushy.
Notes
- You can add cheese to the top of the hash browns during the last few minutes and let it melt if you're feeling really indulgent. 😉 Yum!
