I looked for quite a while trying to find the best chicken salad recipe. After a long and arduous search I found one…and then changed it. It is now a family favorite. 🙂 I love how simple it is, and that you can still add in other ingredients like red grapes and slivered almonds if you have them on hand. Another thing that I love about this recipe is that it uses plain kefir instead of plain yogurt, (although, you can definitely use yogurt if that’s what you have on hand). The kefir gives it an extra boost of nutrition as it is loaded with healthy probiotics! Our favorite rolls to eat them on are the Homemade Sweet Hawaiian Rolls. Enjoy!
- 2-3 large chicken breasts, shredded (or two 12.5 oz containers of canned chicken)
- 2-3 stalks of celery, diced
- 3-5 whole green onions, chopped
- 1/2 cup grapes, diced (optional)
- 1/4 cup sliced almonds (optional)
- 1/2 cup mayonnaise
- 1 cup plain kefir (or yogurt)
- 3-4 Tbs brown sugar
- 1 Tbs lemon juice
- salt and pepper to taste
- Mix mayonnaise, kefir or yogurt, brown sugar, lemon juice, and salt and pepper in a bowl.
- Then add the chicken and chopped vegetables and stir.
- Cover and let it chill for several hours in the fridge.
- Serve over soft rolls, bread, toast, or lettuce.
