This was one of my favorite snacks growing up. I’m not exactly sure how my Mom came up with it. Maybe there was left over whipped cream and she was hoping to get more fresh fruit into us kids, so she combined them hoping for success, which I must say, she obtained! Whenever I have heavy cream in the house now I like to whip some up just for these lovely little apples. You can actually add any type of fresh fruit, especially berries, but, I don’t know…there is something about fresh apples and whipped cream that is subtle and satisfying all in one. I like using fuji or gala apples with this. You can also use an apple that is more tart since the cream and sugar can sweeten them up a bit too. Enjoy!
Update: So I finally asked my mom how she came up with this and she said it was something that her mother and grandmother used to make. They would make it when they noticed the apples were starting to go bad (I guess I had it a little backwards); but I love recipes like this (the kind that have been handed down from generation to generation), so I’m going to post it in Traditional Cooking as well. 🙂
- 2 cups heavy whipping cream
- 4-6 Tbsp sugar
- 3-4 apples, peeled and diced
- Beat the whip cream in a mixing bowl on medium speed until soft peaks form when you lift the beaters out, (about 4 1/2 minutes in a small bowl or 6 minutes in a larger bowl) You want it slightly under whipped when you add the sugar in. That way you won't over whip it and turn it into butter by the time you're done.
- Add in the sugar (depending on how sweet you'd like it), and beat just enough to incorporate it. (You can whip it a little more if needed, but watch it closely so as not to over whip it.)
- Mix in diced apples.
- Serve immediately or put in the fridge to chill and serve later. but this is best eaten within an hour of making.
- In the past I have tried adding 1 tsp of vanilla to the cream to see if it would add extra flavor, and although it did, I also noticed that it made it taste heavier and not as light and fresh. The smooth consistency of the cream also seemed more...I don't know, chunky, grainy, not as appetizing as it normally is. So if you've been wondering about this, feel free to try it, but maybe try less vanilla to start. My favorite is still just the cream and sugar though! 😉
