Today I present to you, Simply Delicious Cinnamon Pancakes. These pancakes are (like the name says), so simple and yet so tasty with just a hint of cinnamon! Covering them with real butter and maple syrup is a must in my book. Not long ago, I was in a large grocery store and I asked one of the store workers where their maple syrup was located. The young man kindly walked me to it’s location and pointed to it. Then he said, pointing to the artificial syrup, “And if you want the real stuff, it’s right there.” I was so stunned and confused that I stood there dumbfounded as he walked away. I laugh about it now, but it’s made me contemplate how far we have come that some of us don’t recognize the differences between what is real and what has become the norm. The same goes for making pancakes from scratch verses making pancakes from a pancake mix. Now, there is nothing wrong with using a mix, but I must say, that for me the taste of pancakes made completely from scratch is far superior to mixes and frozen breakfast types. They are so much healthier too. Trying to keep all of those artificial colors, additives and preservatives out of our bodies is hard enough, but what a blessing to be able to make delicious foods that are nourishing to our bodies and cost half the price!!
One of the reasons I love this recipe is because it’s so versatile in regards to the ingredients. You can use milk, a milk substitute, or buttermilk, and even with the flour you can use all-purpose, whole wheat, half white and half wheat, or in my case, I like to use sprouted soft white whole wheat flour. The same goes for the oil and sugar. So use your favorite ingredients and enjoy the pleasure of knowing you’ve created something amazing!
- 1 cup flour
- 2 Tbs sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup milk
- 1 tsp oil
- 1 large egg
- 1 tsp vanilla extract
- 1/4 tsp cinnamon (this can be optional)
- Combine all ingredients and stir until smooth.
- Spoon approximately 1/4 cup batter onto a hot nonstick griddle or skillet coated lightly with oil or cooking spray.
- Turn pancakes when tops are covered with bubbles and edges look cooked (you can lift one of the edges with a spatula slightly before flipping to check the edges).
- Keep them on a plate in the oven or microwave while you finish making them to keep them warm.
- Top with butter, syrup, jam, applesauce, fruit, or your favorite topping. Enjoy!

These were amazing ! I messed up at first and put 1 3/4 cups milk, so I had to add 1/4 cup of flour and a pinch of baking soda. I also added 1 tsp of vanilla extract and used irish butter . Omg these came out so goooooddddd !!!!
