This is one of those lovely meals that has a variety of flavors and textures that leave you wanting more (or, just asking for seconds). Getting the beef in the crock-pot early is the key. We love these with homemade flour tortillas. We also use a great homemade taco seasoning that we found on weedemandreap.com.
Shredded Beef Tacos (crock-pot)

A mouth watering array of fresh and seasoned portions

Ingredients
- 1 lb of boneless roast beef (or chuck or round roast)
- 1-2 Tbs Olive Oil
- 1/8 cup taco seasoning
- 1 cup water
- 1 head of lettuce
- 2-3 tomatoes
- 1 cup cheddar cheese
- 1 avocado or 1/2 to 1 cup of guacamole
- Salsa
Instructions
- Place beef in crock-pot
- Pour oil over beef
- Sprinkle taco seasoning over beef
- Pour water over beef
- Cook in crock-pot on high for 6-8 hours or low for 8-10 hours
- Once it is finished cooking, remove any beef fat from crock-pot
- Shred the beef and let it soak up any additional liquid left in crock-pot
- Serve over homemade flour tortillas with lettuce, tomatoes, cheese, avocados/guacamole, and salsa-or any additional toppings of your choice.
