This was my all-time favorite hot dish growing up. So much so that we all called it Melani’s Hot Dish. I was quite the picky eater, but this was one of those meals that I could never get enough of. It’s incredibly simple to make and that’s partly what makes it so amazing, because it’s not overly complicated you are able to taste and relish in all the flavors.
Simple Ingredients. These include browned hamburger, pasta noodles, corn, and tomato soup (I show you the homemade version below), but that’s it! I’d say that’s pretty simple. 😉
I’ve altered some of the ingredients from when I was younger, adding more soup and also making the soup from scratch using tomato sauce (since I often had sensitivities with dairy and food additives), allows the dish to be more allergy friendly. You can also try this with gluten-free pasta noodles, although, I would recommend not cooking the pasta completely, leaving them slightly firm so that they don’t get mushy (I never had much luck when making gluten-free pasta). Enjoy!
- 1/2 bag or 8 oz of elbow noodles or any type of pasta noodle
- 1 Tbsp Olive Oil
- 1 tsp salt
- 1 pound of ground hamburger
- Salt, garlic powder, and onion powder to taste
- 1 can of corn, drained (15.25 oz)
- 2 cans of tomato sauce (16 oz each) (OR 2 cans of tomato soup prepared)*
- 1 cup of milk (or milk substitute)
- 2 Tbsp sugar
- 1 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp pepper (optional)**
- Prepare pasta noodles adding the Olive Oil and 1 tsp of salt. Cook according to package directions.
- Brown hamburger and season with salt, garlic powder and onion powder (add the seasoning while it's still raw but cooking, just sprinkle it over the top of it.
- Warm tomato sauce in a different pan adding the milk, sugar, 1 tsp of salt, 1/4 tsp of garlic powder, 1/4 tsp of onion powder, and 1/8 tsp of pepper. (This is basically a homemade version of tomato soup. You can also just use 2 cans of tomato soup prepared instead of this).
- Once these are all cooked, drain the pasta and combine in a large pot the pasta, hamburger, corn (drained), and tomato sauce/soup.
- Mix together, adding salt to taste.
- Serve warm.
- *If using the tomato soup instead of tomato sauce, prepare the soup as directed and omit the last six ingredients on this list (unless of course, you're adding milk to the soup).
- **The pepper adds a bit of a zing to the hot dish. So if that's what you're after, by all means add it. I prefer it without the pepper, my husband prefers it with.
