Well hello all! It’s been a while, but after a new baby and selling our home, I’m finally back! And I am very excited to share this time-tested pancake recipe with you! These pancakes come from my Great-Grandma Irene, and my mom used to make them for us often while we were growing up.
I love that these are made with all whole wheat flour. Many people shy away from whole wheat because of the strong flavor, and because it has become less common using whole wheat in baking and cooking; but this recipe is a great one when trying to ease your family into eating whole wheat foods. I especially love eating these pancakes with homemade whipped cream and fresh fruit! My sister would always eat these with applesauce as her topping of choice. But whichever toppings you choose you’re sure to love these pancakes!
This recipe only serves 2-3 people, so if you have a big family you may want to double or triple the recipe. I also love making homemade whipped cream for these (as well as for waffles!) Making these on a griddle is the easiest method for cooking, but if you don’t have the space or means, using a square griddle also works great!

- 1 cup whole wheat flour (I use soft white whole wheat, but any kind will work)
- 1 cup milk (or milk substitute)
- 1 egg
- 2 tablespoons sugar (or honey)
- 2 tablespoons oil
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- Heat griddle on medium-high to high (approx. 400 degrees).
- Combine all ingredients and mix well.
- Scoop by 1/4 cup scoops onto hot griddle, (do not spread out the batter on the griddle, allow it to spread by itself).
- Flip when batter starts to bubble on one side.
- Serve warm with butter and real maple syrup, or homemade whipped cream and fruit.

I might try these for my kids tomorrow. I usually have a big bag of pancake mix to make the mornings easier, but id like to try a healthier version. And real warm maple all the way!
