Aw Sweet Bread, one of my favorite categories of bread. I love making sweet bread and I love eating it even more. My husband likes to remind me that having all the sweet bread around is making him gain weight, as he cuts himself another slice (skipping the plate mind you). But I like to consider it almost like a healthy cupcake in bread form, because it’s always healthier without frosting right? Unless you’re making our Applesauce Cinnamon Bread, but that has fruit in it, so we’re good!
This bread was a lifesaver with my picky little eater. It was one of about four things that he would actually eat when he was younger. And although I have tried a variety of other zucchini bread recipes, we have always come back to this one. It is moist and flavorful, and oh so good!
The original recipe calls for sugar, but I have found that using honey lightens the bread up a bit and makes it that much healthier. I also like to substitute in some wheat flour for white, and substituting some applesauce for the oil is also an option. I have found that the applesauce doesn’t make it quite as moist though, but feel free to adjust it to your liking! Enjoy!
- 1 cup oil (I use olive oil, but any kind should work)*
- 3 eggs
- 1 3/4 cups honey (or 2 cups of sugar will also work)
- 3 tsps vanilla extract
- 3 cups flour (I like replacing 1-2 cups of wheat flour in place of the white flour-Sprouted Wheat is best)
- 1/2 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 3 tsp cinnamon
- 2 cups shredded zucchini**
- Preheat oven to 325 degrees, and grease two 8x4 bread pans.
- Beat oil, eggs, honey or sugar and vanilla until well combined.
- Add in all dry ingredients and blend together with wet ingredients until combined.
- Stir in zucchini, or beat on low until combined.
- Pour batter into prepared pans.
- Bake for 40-65 minutes, or until toothpick inserted in center comes out clean.
- Cool bread in pan for 10-20 minutes before removing from pan. Then remove from pan and allow to cool completely.
- *You can substitute applesauce for the oil or use 1/2 cup of applesauce and 1/2 cup of oil, but I have found that using applesauce doesn't make it as moist.
- **If using frozen zucchini, thaw completely and drain excess liquid before using.
