Oooooooh my, these brownies are aMaZiNg! The first time I made these we scarfed them down within a few days (okay..it may have been a day and a half), and then made them again because we couldn’t bare the thought of them being gone. Then I had to make them yet again (but don’t worry, there were no tears running down this face!) a few days later to share with some family members. So after making these brownies three times in the last week I knew I just had to share them with you to pass along their goodness!
These brownies are very moist, rich, and also taste fabulous with strawberries on top, almost like fondu. What I love about this recipe is how simple the ingredients are. Nothing fancy, just simple and delicious! I found this recipe over at life-in-the-lofthouse.com, and I’m so thankful they passed it along!
- 1 cup butter, melted
- 1/2 cup cocoa powder, unsweetened
- 2 cups flour
- 2 cups sugar
- 4 large eggs
- 4 tsp vanilla extract
- 1/4 cup butter, softened
- 1/4 cup plain Kefir or milk
- 1/4 cup cocoa powder, unsweetened
- 3 cups powdered sugar
- Preheat oven to 350 degrees. Line a 9x13 baking pan with tinfoil. Spray foil with non-stick spray or coat it with oil (I use Olive Oil).
- In a medium sized bowl add melted butter and cocoa powder and blend with a blender until smooth.
- Add the flour and sugar and blend until mixed (it will be crumbly). Then add the eggs and vanilla and mix just until blended, (try not to over mix!). The batter will be thick.
- Pour batter into prepared baking dish and spread out evenly.
- Bake 25-30 minutes, or until inserted toothpick comes out clean.
- Allow brownies to cool at least 15 minutes before frosting. You want the brownies to still be WARM when you frost them, so don't allow to cool completely.
- For the Chocolate Frosting, mix all ingredients in a medium sized bowl until smooth. The frosting will be thick but will melt on the brownies as you begin to frost them making it easier to spread. Allow to cool completely before cutting and serving. Enjoy!
- Adding fresh strawberries as a garnish is a delicious way to lighten up the taste! Yum!

Ahhhh … brownies … we used to have them all the time in our school cafeteria when I was a kid … it was the ‘pièce de résistance’ of my lunch … Great recipe! 🙂
