I’m excited to share these chocolate coconut cupcakes with you today along with a free giveaway (see below the recipe)! This recipe has quickly become a family favorite. It’s light and moist, just like a store bought cake would be but without all of the added preservatives!
I still remember the first time I made this chocolate cake recipe, my husband kept taking one bite after another and just kept nodding his head and waving his fork in the air in between bites, which I have come to learn over the years means, “This is SO good I can’t even speak!” So now the silent head-nod and fork waving is what I look for when making a new recipe.
We also took these Chocolate Coconut Cupcakes on a recent family vacation that included extended family as well; and as much as we had planned on sharing them with the rest of our extended family, we’d already eaten too many of them for there to be enough for everyone, so we…kept them a secret (Ah! sorry family, but now you know) from everyone, and quietly enjoyed them away from the crowd. But not to worry, we are making them again soon to share with everyone!
This cake recipe was first found on Hershey’s Kitchens, and I have made it many many times since then. It tastes great with chocolate or vanilla frosting, although our favorite is with vanilla (don’t worry, I’ve included the recipe below), and it works great for celebrations, get-togethers, or just a simple evening dessert.

- 2 cups white sugar or organic cane sugar*
- 2 1/4 cups flour, fluff the flour before scooping (I also like to use sprouted whole wheat flour)
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup milk or kefir
- 1/2 cup oil (I like to use olive oil but any kind should work fine)
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1/4 cup butter softened
- 3 cups powdered sugar
- 1 1/2 teaspoon vanilla extract
- 3-5 Tablespoons milk or kefir
- Coconut for topping
- Preheat oven to 350 degrees F. Fill cupcake pans with cupcake liners or cover oil or non stick spray.
- In a medium bowl stir together sugar, flour, cocoa powder, baking soda, baking powder, and salt. Then add the eggs, milk or kefir, oil, and vanilla. Mix with an electric mixer for 3 minutes. Stir in the boiling water by hand. Pour into prepared cupcake pans, about 2/3 of the way full.
- Bake for 22-25 minutes or until a toothpick inserted comes out clean. Cool 5-10 minutes before removing from pans.
- Mix all ingredients for the frosting. Beat with a mixer until it's the consistency that you want. (If you want it thicker add less milk or kefir. If you want it thinner, add more milk or kefir. If it's too thin, add a little more powdered sugar. Just be aware if you add too much more powdered sugar it can affect the flavor of the frosting.)
- Once cupcakes have cooled completely, frost each cupcake with frosting and sprinkle coconut on top.
- *I have used up to 1/2 cup of succanat in place of 1/2 cup of cane sugar and it has still tasted great!
