If you’ve ever been in a hurry to make dinner you know that preparing the meat can often take the longest. When I first got married my husband and I were both working full-time and I remember trying to come up with meals that I could prepare in about 15 minutes since we would both come home famished. Most of the time however, I would end up pulling out a can of chicken instead of preparing chicken from scratch. I came up with some great meals during that time-some of which are still family favorites, but now days I try to prepare a lot of meat at once and then freeze it until I need it.
One of the great things about using crock-pots is that you can prep it quickly in the morning, leave it, and then it’s ready latter that day. When I make chicken in the crock-pot I like to make a lot so that I can divide it into separate bags, freeze it, and then pull it out when what I’m making calls for chicken. The seasonings that I add always provide great flavor to the chicken regardless of what we are using it for, but feel free to change according to your tastes. This is a family favorite, especially since shredded chicken is preferred over chunks of chicken by a few of the family members.
- 2-3 large chicken breasts
- 1 cup water
- 2-3 Tbs Olive Oil
- salt
- pepper
- garlic powder
- onion powder
- Place the chicken breasts in the crock pot
- Add water
- Pour Olive Oil over chicken
- Sprinkle salt, pepper, garlic powder, and onion powder over chicken (just a light covering on the top)
- Cook on high 4-6 hours or low for 8-10 hours
- Take out chicken and shred with two forks on a plate
- If you want to use the juice from the chicken, strain out any chicken fat that may have surfaced.
- This can be used in a variety of dishes including, Chicken Alfredo, shredded chicken tacos, chicken salad sandwiches, olive oil chicken pasta, chicken enchiladas, chicken noodle soup, etc. The possibilities are endless!
- You can also make larger batches of this and store the cooked chicken in the freezer for when you need it for a quick meal. I generally separate it into small Ziploc bags and then put those smaller bags into a large Ziploc bag and label it with the name and date cooked.
